RFI: freezing hot dogs
Sun, 01/8/06 4:39 PM
( permalink)
Ok, I got another good deal on the Sabrett's their selling here in Williamsburg (VA) and I bought 5lbs. So can I freeze these puppies without losing the flavor/texture? Or should I just keep them in the fridge? If it matters they are skinless dogs. BTW, I have done a search and read several posts implying both that freezing changes/doesn't change the dog. Thanks loads Cathy

What does RFI mean? And "Thanks loads" somehow just sounds kinda wrong.

Just a guess, but I think it stands for Request For Information. And what's wrong with Thanks loads? It used to be standard usage, as I recall.

Williamsburger, Though I prefer not to freeze franks, I've done it, and actually never noticed a difference in texture or taste. Of course, I'd follow my rule of thumb insofar as length of freezing time. I don't freeze any meat for more than 3 mos. I know some people will eat an unearthed (or, is it un-iceberged?) mastodon. Incidentally, unless you're going to unfreeze a whole bunch at one time, and therefore want to keep them in their original, sealed wrap, you may want to bundle them in amounts you're bound to use, and then freeze: i.e.--in twos, fours, etc. Nice and convenient that way. Enjoy. The Bear

Once a hot dog's produced, it can be refrigerated up to 14 days. Freezing dogs during the two week window, retains freshness for six months. Keep frozen products in Freezer Ziplocs and cook as needed. Bleeding out air before sealing prevents freezer burn. I break up my 5 lbs Hummel packs into 6-dog packs. I use Freezer zip locks, and add enough (1/4-1/2 cup) cold water to each pack that the dogs get frozen in a small amount of ice. No freezer burn.

We get 5lbs of dogs from the wifes work. I divide them into freezer bags, 2-4-6 to a bag. Its ez to pull 2 out for lunch or when kid sitting. I don't notice any appreciable difference in taste/texture but then I'm one of the neanderthals who can pull a chunk of mastadon from the deep reaches of the freezer (or last years venison roast)

Thanks everyone for your advice. I've frozen 3# of the hot dogs and we've consumed most of one other. Cathy

When freezing anything that has a high moisture content, wet the items and lay them out on a sheet pan lined with a piece of foil or wax paper. Then place the whole pan in the freezer and wait an hour or so until frozen solid. Take the Individually Quick Frozen (IQF)items off of the pan and place into a plastic freezer baggy (squeeze out the air) and the items should be great for usage over 3 or so months with little change to texture or quality. This is a food industry trick for creating long-term storage solutions for large quantities of scaleable ingredients. I have done this successfully with small quantities of shrimp, scallops, sausages, diced jalepenos and similar veggies, etc. I see bad results with delicate cell items like onions, garlic, etc. FYI - be aware that a hot dog is an emulsified meat product, so the possibility that the hot dog could "break" or lose it's fatty succulence is always there. Cheers!
