I have a boneless porkloin on my menu, I smoke it to 135, wrap it and serve a porkloin platter or sandwich, with gravy. order comes in, slice it, flat top to heat, gravy, thick slices for our pork chop platter. Porkloin platter thin slice, about 25 on the Hobart.

No I just had some BBQ friends butting heads as usual. We are trying a new approach to fund raising. I like the bone-in, Big Chop. All they do here is fried catfish and chicken strips and the usual sides, slaw, fries and hushpuppy. First is to business owners, county exec.'s and City Exec.'s. Tickets can be purchased at anywhere. We have Reg. BBQ joints that have tried to get in, but failed. their BBQ is crap on my Map. We need a good BBQ House. Wife never enjoyed BBQ or should I say thought to look for good Que. Now she tells me whats good and what is bad. I love it. Besides politics we have found other things to argue about.
