I am trying my hand at cooking some Armenian dishes and have come across recipes that call for the spice mixture called chaman. Anyone have a clue as to what it consists of?

Chaman is also a spice blend containing carroway, cumin and fenugreek and near east red pepper I believe. It's the blend that's part of the curing process for bastyrma, a spicy dry cured meat that is served with mezze. The armenian kind is the best and highest quality, but it is an acquired taste.

Hey Grampy, it looks as if we were both almost right. Of course, in India chaman is cottage cheese cooked in something yellow, and in Pakistan is's a border town.

And, of course, here we say: "Please don't squeeze the chaman!"
