Here on my vacation in New Mexico, just made a great easy meal: took steak, put it in a "baggie" and poured in lots of red chile powder(cascabel, I think, mild-medium heat). Mushed it up and put it on the grill. Thick with chile, it was delicious. The chile sort of got soft with the steak juices and had a nice sweet taste almost like red bell pepper with a little bite. Next time, green chile!
