Hey all,
I just stumbled this site and it looks pretty cool. I hope to open my own dog stand in the near future, like quite a few of the others on this site, and I was wondering if anyone could help me out. I'm trying to figure out as many regional favorites (such as the Chicago style or coney island style) as possible. I appreciate the help.

    The Carolina dog should have yellow mustard, onion and chili with a choice of coleslaw

        Oklahoma dogs almost always are served with chili sauce,cheese---the semi liquid canned nacho topping--and onions---occasional yellow mustard. Back in my home town of Millis Ma. the favorite was spicy mustard and sweet relish or piccalli served on a toasted top split bun. I am trying to find a source for those buns as i am convinced that once anyone has tried them---buttered and grilled---nothing compares ever again!

          I'm from flint, Mi. We are known for having a ton of "coney island" restaurants in town. If you don't know what a coney islan is it's a hot dog with a meat sauce covering it. Now, this is much different than a chili dog that many people will try to pass of as a "coney". Theres also two different types of "coneys' in this area. Theres detroit style and flint style. The flint style is my personal favorite. In fact thats how I stumbled on to this site. I was searching for a flint style sauce recipe. This is the recipe I found. When the recipe calls for a good "casing" hot dog, most coney restaurants in this area use Koegles (flint original) brand viennas exclusively, the skin casing cracks or pops when you bite in to it. And you have to have onions and mustard.
          By the way the coney restaurant that is most famous in flint is Angelo's. Do a search on google for "angelo's coney island" and read some of the comments on the pages.
          Good luck
          1 TB butter
          1 TB margarine
          1-1/2 lb LEAN ground beef
          2 md onions minced
          1 clove garlic minced
          3 TB chile powder
          1 TB prepared mustard
          1 (6oz) can tomato paste
          1 (6oz) can water
          4 / 5 cheap skinless hot dogs
          salt and pepper to taste

          Do NOT brown beef before using!!
          Combine all except hot dogs and simmer until thick.
          Grind
          the hot dogs [or chop in food processor] stir in
          and cook
          15 min longer.

          Store in frig or freeze some.

          Use over GOOD casing type hot dogs with chopped
          onions and
          mustard. The big secret in this recipe is the
          ground
          cheap hot dogs. This is the orignal Flint [MI]
          Coney
          Island sauce. Best around anywhere.

              emsmom: I've gotta try that one, I don't know of any place out here that serves 'em up like that.

              This was the kind of thing I was hoping to find out. Out here on the Pacific Coast we don't have much in the way of "regional favorites". Don't get me wrong, there are quite a few original styles out here but they each seem to be exclusive to what ever stand serves them. Y'know. So, again thanks to all, and I hope to see more and more of these.

                    I love a good chili dog, at least i did until I moved to Cincinnati from GA. Down there we have real hotdog chili, not this Coney Sauce stuff they serve up here, yuck! I bet being in California, with everyone being from somewhere else, if you were able to offer a variety of chili, that would be a big a hit, that way, where ever you were from it would remind you of home.

                      I'm originally from Columbus, GA where we eat scrambled dogs. They are like a chili dog with 2 dogs, extra chili and the bun and dog are cut up and eaten witha fork. Common toppings are onions ketchup and mustard. I'm told they originated at Dinglewood's pharmacy, which is still there.

                          for my money , it's chicago , all the way . good ol' vienna beef franks ( 4/1 ) , poppy seed buns , celery salt , cucumber , kosher slices , sweet relish , fresh diced tomato . a little yellow mustard . HEAVEN !!!

                          there used to be a guy , just up the street from comiskey park ( whatever street runs parallel to the 3rd baseline ). he had a stand on a corner lot next to his house , and he and his family had the best dog in town .

                          what about the old days , when howard johnson's had one of the finest dogs i've ever eaten ? it was all in the trimmed and toasted bun . no trip from vidalia to orlando , in the late 50's was complete without a stop at the hojo near the state line ( old us 1 ) . also on that stretch , of note : the red pig , and the king & prince drive in , in folkston . GEEEEEEEZ , how could i forget ??? the green frog , in waycross . three guesses what THEIR house specialty was ( hint : it wasn't hotdogs )

                              You are right on about the scrambled dog! Actually the dish originated at the old, long gone Firm Roberts' Cafe on Old Cusseta Road. A young kitchen helper named Lieutenant Stevens worked there, and when he went to work at Dinglewood Pharmacy's lunch counter on Wynnton Road, he took the recipe with him in his head. Over the last 50 years, he's tinkered with it a bit, but it remains basically the same. Mr. Stevens retired recently, but still comes in often to eat, visit, and supervise.
                              Variations of it exist all over town. I tried one at Country's BBQ on Broad Street and was impressed, but until I can return to Columbus and have one at Dinglewood (which was named for an estate, which was in turn named for the ancestral home of the family, Dingle, in the British Isles), I won't feel like I have anything like a complete picture.
                              Mr. Stevens asserts that he is not the creator, but the progenitor of the scrambled dog. Without him, it might have been relegated to history's culinary scrapheap, and that would have been a shame. Here's to him!!

                                With the demise of Howard Johnson's restaurant, I'm desperate to find a few jars of their (delicious) pickle relish. Any idea if it's still being manufactured? Where I can buy it? Thanks in advance!

                                  I know this is of no great importance but i wonder what happened to all the lucky dogs carts that you would see in nola. They were great at about 4am walking down bourbon st.
