Regional Meats

Any favorites?

I acquired a taste for Taylor Ham (Pork Roll) and Scrapple from days in Central NJ and Philly.

    Also in the same region Boss is lebanon Bologna that I'm fond of

    Smithfield Ham.
    This dry, very salty, deep red ham is a rare treat. In Virginia you can find all sorts of places that sell it buy the pound. Here in Milwaukee? HA! The gourmet grocery store V.RICHARDS briefly carried it by the whole ham but I don't love Smithfield ham enough to buy a whole ham and spend the necessary time to boil off the protective layer of mold.

    The good thing about living in Baltimore is that I'm in between the Lebanon Bologogna (to the north) the Smithfield Ham (to the south) and the Scrapple (to the east)

    It's been a while since I've had Lebanon Bologna, but I had the other two this week.
