 Remelt candy we made.....

Hi,

We were making some anise candy last night and did not have a candy thermometer so we did the water test method and apparently we were off.

The candy cooled over night but is is not hard / brittle, it is just a little soft which off course is not correct.

Can we remelt the candy or do we have to start from scratch?

Oh yeah...this afternoon we are purchasing a candy thermometer.

      To tell you the truth, I have no idea as I have never made candy before. BUT, if nobody else answers, why not try remelting and see what happens. What would you have to lose? At least I would be intersted in finding out...Take care...Stan...

        I have actually recooked fudge...........it turned out too hard but still tasted good. You have nothing to lose by trying.

          I'm almost positive Alton Brown did a show that dealt with your dilemma. I wish I could say what the main topic was. If your a better whiz bang than I at searching a site you could most likely find it. I'd find myself on a Chilean Penguin site. Kind of how I found this place.
