Remelt candy we made.....

Hi, We were making some anise candy last night and did not have a candy thermometer so we did the water test method and apparently we were off. The candy cooled over night but is is not hard / brittle, it is just a little soft which off course is not correct. Can we remelt the candy or do we have to start from scratch? Oh yeah...this afternoon we are purchasing a candy thermometer. Thanks! Mitch

I'm almost positive Alton Brown did a show that dealt with your dilemma. I wish I could say what the main topic was. If your a better whiz bang than I at searching a site you could most likely find it. I'd find myself on a Chilean Penguin site. Kind of how I found this place  .
