 Rigitoni and Shrimp......

Made up a really good pasta dish tonight...
 
I had pre-cooked P&D 21-30 shrimp (use any size you want) and I normally defrost them in the refrigerator all day.. This time, I was in a rush and so I just defrosted them in cold water and dried them off well.  Turned out fine....
 
I used 24 shrimp 
 
Start your pasta water...
 
I took three huge cloves of garlic and crushed them and added them to some olive oil (maybe a bit less than 1/4 cup?).  I added at least 1 tsp cracked pepper, 1/2 tsp kosher salt and 1 tsp of seafood seasoning that they throw on the crabs.  I put that aside. 
 
I chopped up a good bunch of parsley
I chopped up about 1/2 c sweet onion
I chopped up 1/4 c sundried tomatoes
I put aside 1/4 c pine nuts (you could toast them..careful they burn fast!)
I put aside 1/3 c white wine
I put aside 3 T fresh lemon juice
I put aside 1 T butter
 
I used 3/4 lb pasta with the above ingredients..I have no recipes per se...So, I'm just giving you the idea.  
 
Ok...I sauteed the garlic/oil mixture for a minute at medium and then added the diced onion and sauteed it all until it got translucent..Don't burn the garlic!
 
Then I added the wine, the lemon juice and the shrimp even though they were cooked.  I sauteed the shrimp in the mixture for 2-3 minutes and then took them out with a slotted spoon and held them in a bowl (did not want to overcook them and get them tough)
 
Then I rasied up the heat and reduced the mixture to thicken and added the parsley, chopped sun dried tomatoes, the pine nuts and the butter..It gets nice and thick..Then I threw back the shrimp and mixed it up and shut off the heat. 
 
Tossed it into the cooked pasta...You could also put in some Feta....How bad could that be...

    That sounds extremely good! Once I can eat pasta again, I plan to make this. Thanks for sharing.

      Sounds wonderful but  I would never use Rigitoni  with such a lovely light sauce.

        All I had in the house was Rigitoni...I really do not like it at all!  Too thick!

          Baah Ben, I really like this recipe, nice mix of ingredients.  Never thought of lemon juice.
           
          analei, You could cheat with some whole wheat pasta

            @joerogo == i checked the carbs for wholewheat and it was high, but i decided that its about moderation in everything. So, yeah, i am going to cheat...hehehe.

                A nice lighrt homemade rigatoni would be fine....hell,I like rigatoni so much,I'f eat a good commercial one also....penne would have been perfect!

                  Sounds like a great recipe, Ben.
                  analei-being a diabetic, I , too checked out the whole wheat pasta. Not much difference-the rule of thumb is half a cup of pasta versus sauce.And if the sauce is lower carb, you are okay! Baah Bens sounds pretty low carb! Enjoy!

                    Remember, you get to subtract the fiber from the carbs

                      Very good. No feta though, I prefer shrimp pasta without cheese.

                        Good advice Joe-but only if the fiber count is over 5 grams!
