So I know the whole Ro-Tel dip thing has been done to death but I needed something quick and easy for a potluck at work later today. I am using the standard recipe with the cheese, canned Ro-Tel and spicy sausage. But this time I am also adding a mild Chorizo. I will let you know how it turns out!

When you add the sausage do you slice it or chop it? Also do you fry it first or just put it in as is. I've never added sausage to it. I think my husband could eat an old boot if you put Ro-tel dip on it!

The Chorizo came uncooked in a casing so I just cut open the casing and fried and crumbled at the same time..Same with the sausage but that was bulk breakfast sausage so no casing....Always cook and drain the sausage before adding to the slow cooker that I am using otherwise there will be too much grease.

I think it just seems to be a natural fit to the dip but who knows....oh yeah I will in a couple of hours LOL!

The only dip I know using Rotel is Texas Caviar, Southern Caviar or more like Poor Man's Caviar, you will find these recipes on the net.

I love the classic Rotel dip, but love to doctor it up. Saute' onion, bell pepper, another mild chili (ancho or other) and garlic in olive oil until soft. Add rotel & continue to saute until the mixture is almost dry. Add a half a can of beer, a small can of Wolf chili, and the cheese. Heat until soft, warm, and tasty! Really good for those of us with high blood pressure and high cholesterol. cy
