Road trip TX to VA via I-30, I-40, I-81

We are going to be driving from Plano TX through AR, TN and VA to McLean VA in November. We are staying overnight in the following towns - Cookeville TN, Staunton VA, and returning Morristown TN and Texarkana. Any suggestions on restaurants fairly convienent to the interstates would be great. We have never done the drive before but have relatives in McLean so this will be the first of many trips I'm sure. Cathy, Check out the review that I just posted on re: Three Li'l Pigs BBQ off of I-81 near Roanoke, VA. (The original poster, skat, incorrectly called the route I-85 in their title for the thread). Also, in Roanoke, is "The Roanoker" restaurant. Not hard to find off the interstate, this is a classic one reviewed by the Sterns in the past, and it remains true to its reputation.
