Roadfood.com on German TV

Hi foodlovers,

I just learned about roadfood.com on German TV, it was a film with a bus full of roadfood members driving from one restaurant to the next.

The most interesting item was about a chicken recipe, which was very very hot.  It was said, that the chicken was marinated in something, but not in detail.

Can somebody help me?

Greetings from Northern Germany

Johanna

That was partially filmed while we were in Nashville for the 2007 Roadfood bus tour.  The restaurant you are undoubtedly thinking of is Prince's Hot Chicken.

That could have been the place, do you know, how the chicken is marinated and prepared?

The only hot chicken I know is Kentucky Fried Chicken - hot -

But  I moved from Wiesbaden to here, and the next KFC is approx.

    Johanna,
Welcome and please see this video with the former Bürgermeister of Nashville:
    http://www.nashvillehotchickenfestival.com/Contact_Us.php

While the recipes used by these restaurants are all closely guarded secrets, you can find recipes here on roadfood.com and on other web sites. See this discussion:
    http://www.roadfood.com/Forums/tm.aspx?New-Nashville-Hot-Chicken&m=317139

There have been a number of Nashville Hot Chicken discussions here on Roadfood. Use the search function here because the URLs's have changed for the old discussions.

Finally, you can use a search engine to search for <Nashville Hot Chicken Recipes>.

Though not the recipe for Prince's Hot Chicken, here is an award-winning Nashville Hot Chicken recipe: http://blogs.nashvillescene.com/bites/2008/07/bites_exclusive_winning_hot_ch.php

The Paste (enough for one or two chicken breasts):
1 tbsp plus 2 tsp lard
    3 tbsp cayenne
    3 pinches sugar
    3/8 tsp salt
    ¼ tsp garlic powder

    Other Ingredients:
Self-rising flour, chicken, white bread, and pickles

All the seasoning is in the paste; dredge the chicken in plain self-rising flour. Fry it.

Mix all of the ingredients for the paste (microwaving the lard for about 30 seconds will make this easier). Apply it evenly and liberally to the fried chicken using either a basting brush or your latex glove-protected hands. Note: I generally use about a teaspoonful of paste for each side of a chicken breast. This method is the only way I know to get the orange, grease-soaked white bread that is the hallmark of all true hot chicken.

When you've covered the top half, flip it over onto a piece of white bread and finish the job. Enjoy.

Russ, all those locations are operated by or for (not sure) AAFES. Unless things changed, they are only open to US military personnel, dependents, and authorized civilians/contractors. The locations are all on or near our military bases.

ADDENDUM: This page explains who is permitted to eat at AAFES facilities:

I haven't looked at AAFES directories in years, and am surprised to see the amount of their restaurant operations devoted to fast food.

Hi,  while the locations are, as seen by the APO numbers, military sites, the vendors like KFC are usually off base, and therefore open to all.

I used to work for the US military, thats why I know.

Now I live in the north of Germany, no military within 400 miles or more.

Thanks for all your help, I will try it out.
