Roadtrip Maryland to Alaska

My wife and I are planning a roadtrip from our home in Maryland to Alaska and back.  I aim to never eat in a national chain restaurant and to find as many local specialties as possible.  I am including a tentative itinerary below.  I would like advice for places to eat along the way that feature local specialties.  I have the Roadfood kms file for Google Earth and intend to make use of that, but it is sparse in several places.  Also, the emphasis is on good eating more so than good local specialties, so that's why I'm posting.  Any advice would be most welcome.

jimharle, welcome to Roadfood! I've been to many of the places you list but not recently enough to be of any help. All I can say is....  WOW!!! I haven't done a true road trip like that in probably 10 years and love to do something like this again. I hope you get some good advice and then report back on your trip later. Best wishes!
