Since I was so pleased with the rib roast I did on my Weber grill I really wanted to try a whole roasted chicken. Again I did it with charcoal, applewood chips, indirect heat and a drip pan. My fanily loved it. I will do this one again. I stuffed the cavity with fresh herbs, garlic and onion. Here are the results.

    looks fabulous...ok I have a weber kettle...apple chips, charcoal..etc..can you jot down the steps you took to create this beautiful dinner? How long did you cook it for, etc?

      Linda,  I rubed the chicken with olive oil and sprinkled with salt and pepper. After the coals turn gray I push them to one side and place a disposable drip pan on the other. I put the grill in place and then put the chicken over the drip pan. I then add a handfull of the applewood chip(soaked in water) and cover with the dome. As I found with the rib roast I did, not peeking too much is key. After 40 minutes I checked it and added more chips. I checked it again after 30 minutes and then gave it ten more minutes. You can use a meat thermometer to check for doneness but I just jiggled the legs(very scientific). The skin was smokey and crisp and the meat was juicy. Good luck.

        Man, that looks good!
        I can't remember the last chicken I cooked by a method other than grilling...probably a stir-fry or casserole-type dish.
         
        Agnes, if you get the chance try cherry wood sometime.  The color it produces is fantastic.

          Brad, I will have to try it. I've also used hickory when grilling. I agree, doing chicken on the grill is the best. Last weekend I grilled a cut up chicken and basted with some BBQ sauce. Simple but good.

            I'm a little confused.... Where did you put the chips?  On top of the grill?  Above the coals?

              No, right on the coals. The chips are mostly small enough to slip through the slots.

                That looks fantastic!!!!!!!!!!!!!!!! One of the best looking roast chickens that I've seen in a long time.

                        Dennis, I tried to do just that last Thanksgiving but my kids really cling to traditions and they didn't want to change the taste of their beloved Thanksgiving Turkey! I am going to do one this summer, though. I will post the results.

                            Ann, thanks for the compliment. I served mashed Yukon Gold potatoes, Green beans and Krorr's roast chicken gravy made from a packet. I like gravy from scratch but always keep these on hand for convenience. I noticed noone seemed to use the gravy on their chicken. It's flavor was too good to mask.

                                  That's beautiful Agnesrob. You cannot beat the Weber grills.


                                  Christopher Kimball, of America's Test Kitchen, would agree with you. When they have tested grills (I think twice) he always mentions his Weber. On the second episode that tested grills, the basic Weber got high marks in cooking, but didn't get the top nod, because it doesn't have any bells and whistles. But, for under $50, it's definately the best deal for grills. I recently saw one selling for $34.95.                                     Cool, I look forward to seeing how it comes out. I have a turkey breast in the freezer that I may thaw out next week and try grilling it with some hickory and oak chips.

                                        That looks great! Thanks for the detailed instructions. You sure seem to know your stuff!

                                        I love grilled chicken. Even though I grill chicken on the barbecue all the time, I use so many different techniques that it's always something new and exciting. I’ll definitely be trying this method once the weather gets nice!
