Roll top vs hinged lid pan??

Roll top vs hinged lid pan??

Just wondering if there is a particular reason one is better than the other?

    Hinged lids might be simpler to use onsite, but be very sure that your Health Department will allow them. They are more difficult to clean properly back at the commissary. Food and other nasties can get stuck in the hinge.

    Thanks! Making sure everything is clean is a top priority for me. I also think the roll tops are a bit more visually appealing than the hinged tops.

    i think i would be lost with out the hinged lids.   at times it gets very windy but we have no flying lids.    yes  they are very hard to clean.

    When I ran my restaurant I found that the roll type lids kept water from dripping down on the buns. I am goig to get one for my cart as I haven't figured out how to keep them dry thus far.
