SMASHED SWEET POTATOES

As I mentioned on another site featuring BBQ ribs is a place that goes by the name "Wood Ranch" here in Southern California...one of my favorite side dishes I order with the ribs is their "Smashed Sweet Potatoes".....this is not only a side dish but almost a dessert...not too sweet but just enough to pass for both!!

    I love mashed sweet potatoes, also I cut sweet potatoes into thin slices and bake at 425 degrees for about 45 min. in good olive oil. With a little salt and pepper on them they are fantastic.

    I used to like em smashed or baked..but now I can only handle em deep fried.

    I bought some of the fresh crop of sweet potatoes on my way home from the beach last week. Last night, I melted some butter in my skillet, added sliced sweet potatoes and stir fried them for a little while and then sprinkled them with a mixture of brown and white sugar to make a glaze. They were GOOD.

    We stopped at the North Carolina Farmer's Market on our way back from Florida and bought 10 lbs of newly harvested sweet potatoes. We have had them mashed with cinnamon and brown sugar and a sweet potato apple casserole so far. I love them best of all just plainly baked with lots of butter and a little maple syrup put on them when we break them open at the table. I am going to try french fries again .....hoping that the peanut oil someone suggested will do the trick in having a nice crisp french fry

    A subject dear to my heart.... I like them baked plain, in soups, in Thai curries along with white potato and other veggies, roasted w/ olive oil and herbs, oven-fried, sliced thin and baked w/ sliced apples & butter & cinnamon & nutmeg, grilled on the BBQ....

    Pour some maple syrup onto the mashed sweet potato and you will have an awsome dessert.
