Salatka Jarzynowa - Polish Vegetable Salad

An almost impossible find  to buy in a deli, this is a delicious cooked vegetable salad, Polish variation.
 
It always ends up being made at home, and thats just fine..a bit time consuming, but worth every bite....:
 
 
Polish Vegetable Salad (Salatka Jarzynowa)
 
5 yukon gold potatoes  boiled, peeled and cubed
4 eggs boiled, peeled, sliced
5 carrots peeled, boiled, cubed
1 parsnip peeled, boiled, cubed
½ celery root peeled, cut small slivers, blanched 2 minutes.
1 green apple peeled cubed
4 kosher dill pickle spears cubed small
½ cup Le Sueur canned peas or any canned small peas, drained 
1 cup mayonnaise
1 cup sour cream
1 tbs yellow mustard
1 tsp salt, 1 tsp pepper
½ cup dill minced
½ cup Italian parsley minced
 
Add cooled cubed potatoes, carrots, parsnip and celery root in large bowl. Add apple, pickles, peas and eggs. Mix together mayo, sour cream, mustard.  Mix into vegetable bowl. Sprinkle with salt, pepper, dill and parsley.Mix again. Refrigerate for 4 hours till serving.

    Very nice.  I've had this at the Polish restaurant in Houston and enjoyed it very much.  I don't think their version had the apples, parsnips and celery root but maybe so as there were some ingredients I never identified.  I need to stop by their deli/grocery next door and see if they sell it.  Good stuff to have around for a snack.

    oh!  that sounds good and looks tasty!!! 

    is that something from a particular region of poland??  i'm not familiar with it - it's not something anyone in my family ever made.

    Thank you, no, its not from any specific region as far as I know, I don't speak Polish either.  There are many variation of this potato/vegetable salad.  I've seen it without the dill and parsley, with corn, mixed with yogurt and mayo, all different ways.  I just don't put beets in it, thats a totally different recipe for me, more of a pink party salad, Puerto Rican style I've seen.  I think its the celeriac, the celery root taste that makes this special and different.

    This salad for some reason looks very much like a Russian vegetable salad Greek people like to serve.

    Don't ask me the reasoning behind that. I have two Greek friends who do not know each other, and they often serve this at a meal, both all it Russian salad.

    So, being miss curiousity, i went to check a Greek cookbook from Greece, but not written in the language, and there it was, this salad that they caleld Russian salad, and pretty much the vegetable salad you have posted here.

    I'm sure it is, who in the world does not like a cold cooked vegetable salad?  The Russian salad I know, Salad Olivier is just about the same and has bits of meat in it.  Never had a cooked Greek vegetable salad though....

    yes, but the Greeks call it Russian salad. It is all pretty interesting, and i am curious about the origins, but i guess in the end, the most pleasure is in the eating!!

    there's a LOT of carry-over with all the slavic countries...virtually all of them have the same dishes - with slight variations (in ingredients  and/or name) due to regional preferences/customs.

    so, anything russian, polish, ukranian, lithuanian, etc, can be 'said' to be any of the others - especially when it's coming from an area that is completely away from the origin.

    so, the greeks calling it 'russian salad' even though this poster calls it 'polish salad' makes complete sense.  to me, anyhoo! ;)

    The Wiki article on Salade Olivier aka Russian potato salad.  It dates to the 1860s; I wonder if Salatka Jarzynowa goes back further?,  where the idea originated.
