...using leftover grilled salmon. Anyone have a quick and foolproof recipe

    I came up with this recipe on the spur of the moment after we filleted about 20 red salmon and were left with a large amount of raw salmon bits.  This is not the same as a salmon burger, which uses raw fish.  This is light and flaky and freezes very well.

    8 Cups             Cooked, flaked red salmon
    8                      Eggs, beaten
    2 Cups             Crushed saltine crackers
    1 tsp                Hot paprika
    2-3 Tbsp          Dried thyme leaves
    2                      Bunches green onions, chopped
    2 tsp                Salt 

    Mix all ingredients together by hand until well blended.  Form into patties by hand or…Spread out on a large cutting board to a depth of about one inch.  Cut patties with a biscuit cutter or round cookie cutter.   Place in freezer bags and freeze.  Vacuum seal. 
     
    Fry cakes in a little butter until nicely browned and heated through.  Serve with a remoulade or a Louis dressing or an aoli.  Makes about three dozen.  You can also carefully roll the cakes in some Panko prior to browning, which makes for a different texture. I've also chopped up lemon grass and added to it, but I don't think it adds much.

      Thanks, Bigfoot. I ended-up doing a variation of version meshed with some other salmon cake recipes and, without noting exact measurements, consisted of:
       
      • @ 16 oz grilled salmon flaked into a bowl
      • add to the above an equal mix of sauteed sweet onions and celery;
      • mix with the above two eggs, bread crumbs, diced red pepper, mustard, lemon juice and Cajun seasoning (I didn't have Old Bay on-hand and the Cajun seasoning worked out great) and the juice of one lemon
      • form the above into eight three inch round by one inch thick patties
      • roll the above into Panko bread crumbs for exterior crunch (great idea, BF)
      • and fry the above in a moderately heated skillet filled with about an inch of peanut oil.
       
       
      These seriously turned-out fantastic and my kids ended up eating every single one.

        Nice!  I like the idea of minced red bell pepper and lemon juice and will try it next time.

            I have a great side of fresh caught Wild Alaskan Red Salmon (Coho.) I will try experimenting with some recipes that I found on Food Network. I will post any that I find that I especially like.

            I made Big Daddy's Jammin Salmon Burgers, they were WONDERFUL you really need that dill/mayo/lemon in it!!!!!!!!!!!!!!!
