Sandwich fillings

How about some recipes for sandwich fillings? Most of us are going to have leftover turkey, ham, and eggs, so what kind of sandwich fillings do you make out of them. My dad always said the sandwiches after Thanksgiving were the best part. We all know about the good old turkey sandwich (albeit we all have variations of it), but do you have recipes for turkey salad, ham salad, egg salad, etc., that are particularly good?

My turkey sandwich was always the same. White bread with mayonnaise, turkey slices, stuffing and a slice of cranberry sauce. Simple. Delicious, and a cause for another sandwich to go with the leftover pumpkin pie.

Here is a simple recipe for ham salad featuring dry cured old fashioned Country Ham. Country Ham Salad 1 pound ground or finely diced cooked Country Ham 1/2 cup of your favorite sweet pickle relish 1 tsp. brown sugar mayonnaise Dijon mustard Method: Mix ham, relish, and sugar together. Mix in mayonnaise to desired consistency, add mustard to taste.
