Saturday/Tripe

Tripe.Up here in the Boston area this is a tradional saturday afternoon luncheon special in many Italian type restaraunt/bar. The bars also have a chargrille right behind the bar and you can get steak tips, sausage and peppers, lamb or pork tips all at a resonable price. There is one place in Malden Ma. 6 mi. north of Boston if you want the tripe you have to get there early, I'm sure leechef knows of this place. Is this just a regional thing or is it offered elsewhere? Tripe for lunch today. Chow Jim

I have never seen tripe served in a restaurant except in the Boston area. Presumably there are authentic Mexican restaurants in the southwest or elsewhere that serve it but I've not seen it.

Which place in Malden Jim??

I have not seen tripe served in Texas except for making manudo on Sunday mornings. In Boston do they just chop it and put it on the grill?

It's been my experience that you can find tripe on many regular menus in French and Italian restaurants (at least in Northeast Corridor of the East Coast and the Bay Area of California, where I have lived). The French places usually have it a la mode de Caen; the Italian ones have it slow cooked in a tomato sauce. I enjoy it.
