3 tbsp. peanut or vegetable oil
    1/4 lb. snow peas
    Sliced celery
    1 c. sliced mushrooms
4 green onions with tops, cut in pieces
    1 tbsp. soy sauce
    1 tsp. cornstarch
    1/2 tsp. salt
    1/4 tsp. ground ginger
    1/8 tsp. white pepper
3 chicken breast, skinned, boned and cut in pieces

In wok, add 1 tablespoon oil and heat very hot. Add snow peas, mushrooms, and onions. Stir fry 2 minutes. Remove to bowl. In small cup, mix together cornstarch, salt, ginger, and pepper. Set aside. Add remaining oil to wok. Add chicken and cornstarch. Stir fry until chicken turns white. Stir in mushroom mixture and soy sauce. Stir fry until hot.
