Since Berghof's in Chicago is closing, is their recipe for Sauerbraten available? Or any good Sauerbraten recipe.

    There's actually different "styles" of sauerbraten in different regions of Germany, but here's my favorite which was advertised in the cookbook from which it came as "Rhineland style":

    Sauerbraten Rhineland Style

    Place in bowl:

    - 4-5 lb bottom round or rump of beef

    Combine in saucepan and bring to a boil:

    - 2 cups red wine vinegar
    - 4 cups water
    - 1 cup thinly sliced onion
    - 4-5 peppercorns
    - 1 bay leaf
    - 1/4 tsp thyme
    - 2 whole cloves
    - 1 pinch ground nutmeg

    Pour boiling marinade over meat. Add

    - several sprigs parsley

    Marinate in refrigerator at least 2 days (longer is better), turning several times

    After marinating, remove meat from marinade. Strain marinade and reserve. Dredge meat with:

    - 1/4 cup flour

    Sauté meat in large, heavy pot until browned in:

    - 4 tbsp butter or oil

    Add:

    - 2 carrots, sliced
    - 2 onions, quartered
    - 1 tbsp tomato catsup
    - 1 cup strained marinade

    Cover and simmer 2 1/2 to 3 hours until very tender. Remove meat to platter and keep warm. Strain or puree liquid remaining in pot, skim off excess fat. There should be 2 cups. If not, add more strained marinade to make 2 cups. Add

    - 2/3 cup crushed gingersnaps
    - 2 tbsp sugar
    - 1/2 cup red wine
    - 1 cup currants or raisins (optional)

    Bring to boil until thickened. Add:

    - 1/2 cup slivered almonds (optional)

    Slice meat. Pour sauce over. Serve with potato dumpling, spaetzle or noodles

        Sauerbraten ..it always looks so good, it always sounds so Black Forest like,............ so German ............ yet I have always been disappointed every time I order it here in the States or even in Germany ............... my wife Linda is German and she tries to please me with a home cooked Sauerbraten ..and still I don't like the stuff. In Germany I even had it made with venison the original way ....the combination of sour ginger and cloves just some how is not pleasing to me....... Thank god for the spaetzle that usually comes with it ........love German food but not the Sauerbraten............. funny because I do like sour RotKohl (Sweet-sour Red Cabbage) and Sauerkraut ..........
        I'll take Wienerschnitzel any day................

          I taketh ya dont like Sauerbraten... Ya, an aquired taste I guess, but didnt need a paragraph of hate! ha ha... We just lost our German Restraunt here in GR, and I missed out on the closing... Wienerschnitzel... ohhhhh... That would have been so tasty... But no more good German food in West Michigan...

            Kassler Ripchen and spaetzle for me. A few wursts wouldn't hurt neither...lots of it, in fact, with kraut. And don't forget the Bavarian Chocolate Cake.

              My father insisted on sauerbraten every now and then. BT's recipe sounds about right. Nasty stuff, imho. My brothers and I hunted, and every time we'd bring home a rabbit or something, into the sauerbraten juice. Even nastier. Just for old times sake, I was on Lufthansa one time when sauerbraten was on the menu. Nope, again.... Spaetzle was really good. Did I mention that I don't like sauerbraten?
