Sausage Making Time!

I need to get some recipes for making sauage at home,I am interested in that Texas Jalapenao sausage and a morning breakfast sausage.Any body have any ideas? Thanks

Pick up Bruce Aidells' sausage cook book. It not only has a number of great sausage recipes, but great recipes to cook with the sausage.

I remember as a kid we had these breakfast sausages the size of brats, and they we’re like almost a solid white color. Am I remembering correctly? Is there such a thing as a white sausage? I’d fry a couple up and serve them on toast with mustard. We make sausage out of ½ pork ½ beef and just add coriander salt and pepper to taste. I put it in the smoker for 20-30 minutes. It’s still one of my favorites.
