 Sausage?

We have recently added an italian sausage sub to the menu. We at first cooked it on the grill and then put it in a crock pot with pep, onions & sauce but by the end of the day it had over cooked next day cooked on grill and moved to cooler side and it dried out how do you guys keep your sausage or do you cook them to order? Any help appreciated!

    I know it sounds simple minded, but an old adage of foodservice is "cook less more often". How many hours are you holding these for? Possibly youre holding them at too high temp.

      Par cook them, then keep below 40 degrees, then to order keeping onions and peppers hot all the while.
