Scrambeled eggs and bologna

Fried up some cut up kosher bologna, mixed in 3 eggs, scrambeled the concotion, put them on english muffins, really good, don't know why I haven't thought of it before. I'm thinking some melted cheese on top wouldn't hurt any!

    I've never had kosher bologna. The only kind I know is the Oscar Meyer ungodly pink stuff my Momma used to make sandwiches with, and hopefully that stuff never again crosses my tater trap for as long as I live.

    Salami and eggs is an old time kosher-style deli treat. No reason it wouldn't work just as well with bologna.

    If you buy a Hebrew National chub salami, cut it into 1/4" thick slices (score around the edges so they don't curl so much) and fry up with eggs to your desired doneness. I've never seen a H.N. chub bologna, only the sliced, but sliced would work just as well.

    What also works: Taylor Pork Roll and Eggs, PA Sweet Bologna and Eggs, even straight bologna and eggs, all sound good to me.

    You might want to try the same thing with Lil' Smokies Cocktail sausage cut in half, served on a hard roll. I did the bologna thing years ago, but it never did do it for me. I love English muffins, but I think a hard roll contains the mixture better, especially if the eggs are scrambled. Cheese is good and I would suggest a little shredded cheese incorporated into the eggs as you are scrambling them.

    Yeah, grew up with fried bologna for breakfast. We always had it in the house..and it's cheap! Yes and I made breakfast sandwiches with it, You're right. Scrambled eggs and Bologna on an English muffin,with cheese..better than an egg McMuffin. Or try it on a great fresh bagel!

    Had a fried bologna and biscuit this morning (added mustard).

    I like to get the garlic bologna sliced thin at Wal-Mart deli. I also get the German bologna.

    Fried egg, bologna, cheese, lettuce, tomato and pickles on a burger bun sends me to the stars!

    My Father (now since passed on) used to make scrambled eggs with Kentucky Brand bologna (Kentucky round steak as he used to say)and anything else he would find in the fridge to toss in.
    One ingredient he used to love to use and I thought was EWWW was dried onions, oh man those were deadly in the eggs. They were great going down, deadly later hahahaha

    love bologna and eggs....no need for bread, bun or anything else! also, would love to have pork roll and eggs, can't get it in mass. use to be able to get it in keene nh, not any more :( also try fried green pepper cut up and scrambled eggs....was my dad's favorite...to the point,right before he died, he hadn't eaten solid food for weeks and i was making it, he asked if he could have some...no problem.....fond memory!

    will check them out...at this point, the next time my husband goes to jersey for a business trip, i'll give him the money and have him bring back a roll....cheaper than the shipping w/ jerseyporkroll.com!

    Hey! I grew up on that, too! of course, i grew up eating eggs with everything and it as usually for dinner b/c it's so cheap.
    My dad would make us scrambled eggs and baloney,
    eggs and toasted corn tortillas,
    eggs and toasted flour tortilas,
    eggs and weiners,
    eggs and Fritos,
    eggs and beans...... and the list goes on and on! oh how I miss my dad!

    Along the same lines...You can go to Isaly's in West View, PA and get a "West View Omelette" - its an omlette with Isaly's chip-chopped ham in it (a local favorite) and cheese.

    The other day in the Giant Food in Owings Mills, Md, I saw Hebrew National chub bolognas right next to the chub salamis. I'd never seen the chub bologna before. This will make it MUCH easier to swap bologna and eggs for salami and eggs.

    Having grown up on scrambled eggs & bologna (Jumbo, here in Pgh), try a bologna on white bread, mayo & pickle, potato chips.  Put it together & smash it down.  Delish.

    You're not going to believe this, but I've been eating that since I was a child, and I still love it.  Don't even know where I go the idea to add the chips.  I usually pair it with iced tea, cola, or Dr. Pepper.  Thumbs up!

    As has been mentioned this is a good sub( not at all the same) for taylor pork roll . I look forward to getting some of the real thing sent as soon as the colder weather comes

    My sicilian side of our Ialian family mixed scrambled eggs with lots of stuff...besides the standard peppers and eggs and potatoes and eggs...we had bologna and egg sandwiches for lunch...spinach and eggs...chopped up meatball and eggs..fried asparagas and eggs...string bean and eggs...oh you get it....great sandwiches, great lunches!!!
