Marzsit's recipe sounds almost like MFKFischer's recipe in that it takes quite a long time to cook - MFK said something to the effect that scrambling eggs should take about 20 minutes while engaged in good conversation with a dear friend. Cheers, Jphn

Cheers, Jphn it's slower than scrambling eggs in a frying pan, but it's not 20 minutes slow...... maybe between 5 to 10 minutes depending on if the eggs are cold or at room temperature. typically i start the bacon in a skillet, then the eggs in the boiler, and both end up done at the same time.

We tried Marzsit's double boiler method this morning and it produced excellent creamy yellow and white scrambled eggs. Two eggs and a half tablespoon of butter with careful stirring and mixing using a soft plastic spatula produced perfect scrambled eggs in about 5 minutes. Cheers, John
