Setting up a Hot Dog Truck in Michigan

I'm setting up a hot dog truck in Southwest Michigan that caters to the good people of Chicago. Chicago style Hot dogs, Italian beef sanwhiches, and my specialty deep dish lasagne. Actually I can't find an authentic Chicago style hot dog or Italian beef sandwhich in the area. So I decided to convert an old Motorhome into an hot dog truck. Any sugestions from members who run hot dog carts or trucks in Michigan. Any info would be much appreciated. paddy.ohare@hotmail.com

I heard it's a major pain in the arse to pass an Health Deptartment in Berrien County for a converted hot dog truck. Any tips for getting thru this process from some hot dogger who may have survived this experience?
