"Why ask why shad do it...waiter bring me some shad roe". Cole Porter as sung by Eartha Kitt.
Haven't seen any this year but my Dad and I used to snag them in early spring between Chain and Key Bridges on the Virginia side. He just fried them up with a little bacon. What a great breakfast. How about you ChrisOC?

When the ex Mrs. Twinwillow and I stayed at the Plaza Hotel in NYC one spring, I (not her) enjoyed in the bar, a glorious dinner consisting of two large lobes of fresh Shad roe sauteed in brown butter lemon sauce. I can still taste them 25 years later!

We always get our shad and roe "fix" at a restaurant just a few miles south of Chubby's Barbecue.  The restaurant is called "The Shamrock".  The shad is now being served and they expect the roe to be in by the end of next week.  Here's your chance for a great Roadfood eating trip.............have a meal at Chubby's and one at the Shamrock!

Greymo, My wife and I have noticed the "Shamrock Restaurant" on our recent trips up Rt 15. (we usually stop at Chubby's). Aside from shad roe, can you tell me a little more about the place and can you recommend it?
    Thanks!

My father used to catch crappie by the score and he would filet them and scale them and they were delicious.  Some of the female would have huge egg sacs.  He would cook them separately.  Personally I did not care for them.  Perhaps shad roe would be much better???  I do not know.  The only fish eggs I have had since then was caviar when I was in Russia.  They were expensive and my pharma reps raved about them with the vodka.  I thought they were salty but OK???

This thread brings back fond memories of our departed friend SEAFARER JOHN and his lovely wife GAYLE.

Early each Spring John would post progress reports of the shad-run up the Hudson. He loved that Roe !

I tried Shad and some of the sauted roe a couple of times during our Wisconsin visits, I really like the whole fish, but find the roe to be a 'take it or leave it' sort of sample item.
JOHN, I hope the run is good where-ever you are this season,
      R I P my friend.

Available (Canadian) in Dallas at TJ's Seafood as of this writing.
They look beautiful! Very much like the raw ones in ChrisOC's picture above. I'll have to snag a few lobes before they're all gone for this season.

Chris, do you flour them? I've never actually made them.

The guy in Wisconsin sprinkled the roe sacs with seasoned flour...as opposed to dredging them in a pan full of flour, and he too, used butter not frying oil.

Years ago, the shad would run when the apple trees blossomed.
This was on the Connecticut river
