Shipping product to another state.

I own an Italian Hot Dog restaurant in NJ... Yesterday I received a request to ship my product to Arizona. Does anyone here have any advice on the best way to overnight a hot cooked product? I'm also concerned about ruining the integrity of the product via the shipping process. Thanks! Kelli

Kelli People ship food products all the time and have been doing it for years. Cheese cakes, cookies, cakes, ice cream, pastas, etc and the list goes on and on. I have never done it but I do know from reading it is 99% of the time done (shipped) packed with dry ice. (must be cold, can't ship hot-they can reheat when it arrives) Since it is an overnight delivery you just request early morning drop off. (you pay extra vs afternoon , etc). It is fine when it arrives because it is labeled as fragile and perishable on the box. What ever these shipping charges you pass on to the customer. be sure to include proper reheating instruction in the shipment. (should take you 1 minute to type up) I hope this gives you an idea, dig a little deeper and you will get more detailed info. Be well.

You should also be concerned that you will be breaking federal law. You MUST have USDA certification for your commercial kitchen to ship interstate. Most state health depts. also require special state certification to ship food intrastate. You need to check with your insurance carrier to see if coverage allows for what you want to do. And consider that, regardless if the package was mis-handled during shipment or not, if someone becomes ill after eating a shipped product, you could be in for the civil liability. As someone who worked in public health for 17 years, and who knows the system with regard to interstate requirements (I wanted to ship my bbq), my advice is not to do it.

You need to vacuum seal it, dry ice, styrafoam[sp?] sealed container...you maybe need special Health dept. permits to do it...legally.

As davebugg noted, USDA inspection is required for interstate. Since this restaurant is in the Fort Dix/Mc Guire Air Force base area, it could be a transferred serviceman requesting it. This is a legitimate question.

Read it again... Does anyone here have any advice on the best way to overnight a hot cooked product? Not how can I keep my Chili cold enough to ship safely! Very misleading.
