If memory serves, that is how they are listed on the menu at Arthur Bryant's. As a newbie in a crowded place, I didn' feel like asking what the difference was and I got neither (this is when I was much younger and less adventurous in new places). To this day, I do not know what the difference is.

Personally, I prefer them from the long end. That is the, "wide" end your talking about, isn't it? The small end always seems so chewy to me.

Spare ribs are sold that way in KC BBQ joints. The short end is usually a little more expensive, and contains more fat, which can equate to jucier ribs than the larger long ends of the slab.

I prefer the short ends and you can choose either here at David's Bar-B-que. Our Publix markets here have starting packaging this way should you not want the whole slab.

I like them both on spareribs, no real preference. I definitely prefer the long end on baby back ribs. Of course, I keep telling my wife that size doesn't matter.

I used to limit my choice to a 'short-end' order combined with some other meats at Bryant's BBQ...But over the years I have expanded that to get a whole slab plus the beef and pork, plus some turkey for Janet. We package any leftovers for sharing as we "head on down the road"!!

I cook whole slabs but when it comes time to cut them I save off the short ends for myself.

Baby Back's anyone? In the meat packing lingo they are 3 to 5's and 5 and over's. All the same thing today sadly instead you have them with the cartilage or without. If you are talking about something different than I apologize, move along please. I am referring to pork because I am a Tennessean. (If you are talking about beef then I prefer English shorts)
