 Short Order Chefs

I, too, am a TV producer with one of the three leading networks and work with one of the national magazine series...and seek help.

For a story on fast food chefs, I am looking for someone/someones who feed hordes ....and the chedf/s are interesting folks to meet. New Yorker did a story approx. one year ago about a hotel in Las Vegas that serves record numbers of breakfast eaters. That sounds like a template but I do not want to do that same story.

Suggestions are welcome...and I thank you

    One of the food or travel channels did that story about a year ago, but all three meals, not just breakfast. And it was a chain of hotels with central procurement and a central basic commissary, with the main buffet and speciality restaurants.

    Check your index of what has been shown on other channels. That might be a place to start.

      Try a U.S. Navy chef, we usually called him Chief though. They feed 1000s on a daily basis, and do a damn good job of it also. Chow Jim

        I'll second that suggestion. As a former Navy cook, I did not work on such large ships, but the volume frightened me. I cooked on a seagoing tug for 100.

        I have an old friend who works as a corporate chef supervising a well know chain of Italian restaurants. Their claim is that they have a school in Italy for training. Endless soup, salad and breadsticks....
        I suspect that a series on corporate chefs who are responsible for developing menu items would be of interest. Who created the Chalupa??? McGriddle? Applebee's has someone who is responsible for the food that they advertise.
        You could do a couple of shows just on what comes out of the Brinker restaurant group.

        I think that a show on fast food and the people work work and create the food could also include a genesis of how these places came up from from their humble beginnings. We all know about and where to find the original McDonalds. There is an interesting story about Col. Sanders and his original chicken reastaurant.
        But yesterday as I was driving, I had a thought about where is the Original Taco Bell.

        A story about how these places started from a basic and small idea to become countrywide giants could be interesting. This would give you the ability to dovetail your story to the cooks who work in and chefs who create the meals that you can eat in 15 minutes...

          Short Order COOKS!!!!!! the word is COOK ---NOT CHEF!! I was one--for MANY years and we are COOKS and Proud to be COOKS. nothing against chefs but they are NOT cooks---we short order folks are in the trenches ,get out of bed real early,work every day, clean up after yourself,type folks that get to work early and have a regular's order half cooked before they stir their coffee while telling the waitress what they want---which she already knows that your are already cooking it, and we dont mind if you substitute or have special orders, hell EVERYONE has a specific way they want thier breakfast done! We work hard for less then we are worth, we get to know our custumers and when the inevitable time to shift jobs and move on the the dinner across the street comes--alot of our regulars go with us. Remember---COOKS!!! Hell, a chef in a short order road stop????---yea Right!--maybe coming in for breakfast before going to bed!! THATS where i see Chefs anywhere near a short order station!--I have gotten some great tips from them then though!!!

              No degree here. Never have been greeted with "Good morning Chef". "Good morning Grill Man" (buffet boy, fry guy) wouldn't have the same ring to it.
              I myself have not a clue how to chef a chicken but I sure can COOK supper!
