Smoked Buffalo Tenders

I made some of these for dinner last night, I smoked the chicken at around 170 with pecan wood chunks until they were close to done and then mopped them with my buffalo sauce.........All I can say is WOW! I will be doing this again for sure. BTW I served Blue Cheese and Ranch dressing to dip them in and also had a nice pea salad and washed them down with a few home brewed beers...What a treat!

I should add here that since this was chicken and after the smoking was done I raised the temp to make sure it was done.

That chicken looks good!! Mike, You can get Buffalo make that ELK Tenderloin medallions on sale at Jungle Jim's This week, check the store AD on the web-site.

Bob just make sure that you dont have the smoke going when you put the sauce on at the end, it seems to make it bitter for some reason. I just smoke the chicken until it is white the kill the smoke and mop the sauce on them.

But I'll bet those commercial versions are plenty expensive. Truth to tell, I don't care for commercial game meat.

Mr Hoffman---if your serious about buffalo--we have a terrifica source right down the road--Belle Starr Buffalo ranch---they are online and they ship--great product--raise and process their own animals and make a great smoked buffalo brat!---and Ohman---Yes indeed--that chicken looks good!!--but COORS and LIGHT to boot???? Come on down we'll get a case of Shiner at least!

Oe last time for us slow pokes... A- smoke the meat. then add sauce, then turn up heat... or B -smoke the meat, then turn up heat (to finish cooking), then add sauce? I'm guessing "A"? I was thinking that the small medallions would be good in some sort of roll as a sandwich with blue cheese. Any bread type suggestions? or does making it into a sandwich ruin it? (thinking of upcoming tailgating)
