Smoked Filet Mignon, sloppy Joe, Pics

Over smoked some Filet that was labled Brisket, darn, the case set me back $1.59 a lb., was I delighted, yes, I was, it came from IBP the Packer, so my supplier wasn't out a dime. We oversmoked it, so I turned it into a Sloppy Joe, let me tell you, this is REALLY good.

    I use the filet loin tails for beef stew. Pure decadence. But oh so good.

    I used ketchup, onions, green peppers, ground clove, cider vinegar, brown sugar, worstershire, a little cayenne.

    CTF, I would have spammed you for screwing up the Beef Tenderloins. I don't know about using the ketchup as you base, most SJ'S are made with tomato sauce base, chopped onions, peppers, spices......................You do a great job my friend.....BillyB.......P.S. I rub/marinate my tenders with oil, a lot of garlic, salt and pepper, I then sear on a hot grill and finish to 120 degrees..........

    Since we got them for almost nothing we wanted to smoke them to rare, then cool, slice and finish on the flat top for Filet Mignon sandwiches, my lead let them smoke to medium, too well done to try to save so voila, SJ's. Actually Billy the ketchup worked well with the other ingredients, I've never made SJ's from scratch before, a 1 time special here!

    He joined today  so I would say  his  sole reason was to bash this  place.  I have  read  enough of the YELP  reviews to  laugh my  head  off!   Not enough  sauce............there is  a  large selection of  sauces on the tables..........pork not  pulled enough?....give me a break...............a charge for bottled water?  So what?  Have a soda!

    Well, I'm not a fan of Sloppy Joes (except, of course, the old Sloppy Joe's at Woodmont's Bagel Beach in Milford, Connecticut), but I'd love to have a couple of these if for no other reason than to make Chewy The Boob unhappy.

    I read the reviews on Yelp for CTF Chubby's restaurant, I thought all in all they were good. Some of the people may have even had a few good suggestions, Pulled pork, not large chunks and a few other comments. I feel it's good to get an out side view at times to see what other people think. I recommend every restaurant owner have a person come into their restaurant and do a honest review on sanitation, food quality, customer service. All restaurant owners have to be as open to complaints, as they are to compliments. I know a guy like CTF is out to make his food the best he could, he is all about heart, soul and passion for this business..................BillyB

    Just my opinion, but I believe one hit wonders like chewy267 should have his/her posts deleted and their IP address locked out.  It's obvious that he/she has a personal issue with Chewingthefat, and RF should not be the forum where the argument should be settled.
     
    This is not a review of Chubby's, it is a personal attack on a longtime member and great contributor to this site.
