Smoked Pork Belly platter

Pics screwed up, but anyhow this is seriously tender and intensely flavored, all you need is a little salt and pepper...goes well with an ice cold Frostie Cherry Limeade!

I should have added that the fat is so creamy, it's a must eat, as long as your not on a restricted diet, this makes a fantastic sandwich on a good Kaiser.

Hello Ctf they look great, Ive never tried pork belly before, does it taste like bacon?

I am certainly intrigued with trying pork belly now. Your sides and choice of beverage look great, too!

CTF, Is that on the menu ? If it is we'll make a 100 mile detour on our way south this year to give it a try. However, I think the dish calls for strong black coffee, or maybe schnappes or akavit  or even a glass of Bourbon with a little spring water chaser.

John, I'm going try it as long as I can, my waitresses are telling folks about it as a special, most people have never had it so don't order it, those that do love it, it's getting more recognition in some high end restaurants. That said most high end places don't have a smoker and that makes a huge difference. I hope to make it permanent!

No Uncle, not really as it isnt cured as bacon is, no salt, however it has a very tasty pork flavor and does hold the smoke well, Melt in your mouth actually.

 I would use it in a pot of beans instead of bacon or ham hocks. (crisp it up a little and add it at the end) YUM!

If Doing Breakfast on a Fresh Biscuit.
 
Some call it White Bacon
 

Fatback comes from the top rear portion of the hog - up above the hams. Pork belly is  essentially uncured slab  bacon.

Plus I have been waiting for either BillyB or chewingthefat to really knock my socks off with a new Limburger and Onion Sandwich.

CG, if you're in Dubuque and have a hankering for some Limburger, take a short trip to Baumgartner's in Monroe, WI if you have 3-4 hours to spare.
