Smoked Pork Belly platter




Pics screwed up, but anyhow this is seriously tender and intensely flavored, all you need is a little salt and pepper...goes well with an ice cold Frostie Cherry Limeade!

    I should have added that the fat is so creamy, it's a must eat, as long as your not on a restricted diet, this makes a fantastic sandwich on a good Kaiser.

    CTF, Is that on the menu ? If it is we'll make a 100 mile detour on our way south this year to give it a try. However, I think the dish calls for strong black coffee, or maybe schnappes or akavit  or even a glass of Bourbon with a little spring water chaser.

    John, I'm going try it as long as I can, my waitresses are telling folks about it as a special, most people have never had it so don't order it, those that do love it, it's getting more recognition in some high end restaurants. That said most high end places don't have a smoker and that makes a huge difference. I hope to make it permanent!

    No Uncle, not really as it isnt cured as bacon is, no salt, however it has a very tasty pork flavor and does hold the smoke well, Melt in your mouth actually.

     I would use it in a pot of beans instead of bacon or ham hocks. (crisp it up a little and add it at the end) YUM!

    Hell here they call that Fat Back. Slice put on a jelly roll pan, in the oven to crisp up flip and crisp up.
    Bowl of Beans , Fat Back and CornBread all you can eat.  Some places Tues. and some places Weds. Specials
    If Doing Breakfast on a Fresh Biscuit.

    Fatback comes from the top rear portion of the hog - up above the hams. Pork belly is  essentially uncured slab  bacon.

    seafarer John   I am an Old Truck Driver and been stuck in Dubuque, Ia for three days to pick up a load of Sow Bellys. Take them South to Fl,Lykes Brothers to Be Smoked as Bacon. I said some call that fat back

    CG, if you're in Dubuque and have a hankering for some Limburger, take a short trip to Baumgartner's in Monroe, WI if you have 3-4 hours to spare.
