Dumb question....we don't have a charcoal grill-just a gas grill.  Is there ANY way to use it on these pork ribs?

I've never smoked on a gas grill, but I'm pretty sure that you can use one for smoking if you get a wood chip box with holes in it (like this one:  http://www.amazon.com/Cha...mp;keywords=smoker+box )
 
I don't think smoking with gas would taste quite as good as using charcoal, but it should still work. Maybe someone else on here  with experience at it will read this and give you more advice.

Thank you, phlmaestro!  I do know how to use foil to make a wood-chip packet....just wasn't sure that the gas could/would do it like the charcoal does.

You might want to try Youtube and search for something like "smoking ribs on a gas grill."
 
I learned a lot by watching videos on there.

I suspect that smoking on gas should be as good as smoking on charcoal, as it is the smoke that is key.

I have the smoker tray and rotisserie burner option. It works fine (add some more chips i/2 way through perhaps) but I find it uses a good amount of propane for a 3 hour smoke. I also have a commercial thermo  i use to gauge temp, not the one on the grill.

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
For the pork shoulder rub
1/4 cup dark brown sugar
1/2 cup white sugar
1/2 cup paprika
1/3 cup garlic salt
1/3 cup kosher salt
1 tablespoon chili powder
1 teaspoon oregano leaves
1 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon black pepper
I substitute turbinado sugar or sugar in the raw for both sugars and omit the kosher salt.
