Smoked/fried Pork Belly with fried eggs

First you need to find a Pork Belly which simply is a slab of uncured bacon, put a lite amount of rub on it, smoke it at 225-250, for 4-6 hours, I like a long smoke. After smoking, let it cool, although you don't have to, then cut 1/4 inch slices, put on a flat top or fry pan, brown on both sides, fry some eggs, make a sammie, mmmmmmmmmm, really good, wish I had some pics!
