 Smoking time in the Northeast

With a break in the weather this weekend, and moderate temperatures it's time to fire up the smoker. I have 9 racks of babybacks thawing out and will prep & rub them friday for saturdays pre-spring picnic. Along with some baked beans, husp-puppies, slaw, BBQ pulled pork sandwiches and the king of all beverages beer. Of course the ladies will disagree with that and request a couple bottles of wine.

      Without stirring up UN scale controversy, may I ask, why babybacks? Is it just the shorter cooking time? Personally I've been served babybacks that were way overcooked (or under) much more frequently than plain spares.

      I've always been much happier with the results of a St. Louis trimmed rack of spare ribs. Meatier, juicier, cheaper, and bigger.

      Regardless, sounds like your backyard is the place to be this weekend. Enjoy!

          I can't wait for this weekend either - although it's been a relatively mild winter - I am definitely ready for the 60's and 70's and the Q to go along with it. I don't think Bob's smoking this weekend, but we will be grilling something. Have a great PicNic Saturday!

            I too prefer spares, been smoking them all winter down here in Florida. Keep a stiff upper lip, springs on the way.

              Why babybacks vs spares? I guess it is subjective. Maybe a survey would clear the air. I like both but prefer babybacks.

              Look to the north on saturday for the smoke signals.
