Soaking Beans

Do you soak your beans for soups, etc? I have never, soaked mine. I almost always us the crockpot for beans now days and I just throw them in with water or stock and let them go. Besides time I have never seen the advantage of soaking. Same if I cook on top of the stove.

    I do not soak mine either.  I use the crock pot just like you with chicken broth, onions, hog jawl (Cumberland Gap is the best), jalapeno, some other secret spices and served with fried cornbread.  I do not see any advantage for soaking.  Maybe they cook faster but soaking takes time also??  I am sure others will have an opinion.

    I've got some navy bean and ham soup simmering on the back burner right now. And yes, I soak the beans. Mostly because I never get up early enough to start my soup early enough for them to not still be hard when I want to eat it. Requires zero effort on my part to stick them in a pan of water overnight, then go on with making soup. Doesn't hurt, doesn't take any time, my grandma always did...so I do.

    Supposedly they are less gassy if you soak them. Maybe my wife and I will eat a soaked and unsoaked batch sometime soon for a true test. I think the main thing is to make sure they are clean and rinsed. I once found a good sized pebble in some navy beans. Then there is always the medical opinion that there is some sort of phytic acid that it lost by soaking.

    I don't soak my beans because I don't cook with beans unless it comes in a can. My wife does, though and I never thought about why. I have more patience with bread and pizza dough.

    I've done them both ways and don't notice a discernible difference.

    Heh.  Exact opposite of what I do.  Split peas cook so quick I don't need to soak them.  Beans on the otherhand I give them an overnight soak, or the commercial kitchen accelerated soak.(Beans, water, bring to boil, take off heat and let soak 1 hour.)

    Have done it both ways and haven't experienced much difference. Generally, I do the overnight soak, though.

    i was always taught to soak them and to add a tablespoon of baking soda. to cut down on the gas.who knows if that works.

    Until this thread, I had never heard of soaking them cutting down on the gas (and if it does, I'm terribly afraid of how bad it would be without soaking them!). I always figured the soaking was so they didn't take nine years to cook since you were starting from softened instead of rock hard beans.

    I always soak my beans.  I don't have a crock pot (don't want one) so soaking does really cut down on the cooking time.  And besides, when the Late Great Bushie told me how to make his beans, he told me to soak them.  Good enough for me.

    When I make split pea soup, I put the hambone and the dry split peas in some water.  After a few hours I have a delicious green goo.  No need to soak!

    I see three values in soaking overnight, off the top of my head.
    1- Helpful if you don't have a crock pot.
    2- If you're unable to leave it cooking overnight in a crock pot for whatever reason, you can still eat them for dinner.
    3- Dramatically cuts down on cooking time.
     
    I'm guessing you cook yours overnight, but don't eat them until dinnertime. Which means about a whole day of cooking. Same time frame, really, but soaking doesn't take any electricity and doesn't require a crock pot. Just cover them with water and go to bed, drain in the morning and proceed with cooking. Yesterday I made bean and ham soup...soaked the beans overnight (ended up being about 12 hours), started them simmering with ham bone and stock around noon, soup was ready for a 6pm dinnertime.

    I always soak mine. When I soak garbanzos for humus I also add baking soda for the soak and the cook. It makes for a really creamy bean.
