Soft serve machine questions Wed, 04/27/11 9:11 AM (permalink)
Were putting soft-serve ice cream in our 2500sq ft BBQ restaurant and know nothing about soft serve ice cream. Any advice on purchasing machines,best buy,best performance anything that would help a newbie from making mistakes in buying the wrong equipment... Thanks in advance

    How much volume ???????? I had one is a few places over the past. Think about recovery time, size of freezing cylinder, hopper on the bottom or top feed, how often do you want to fool with it, how many heads and flavor's of Ice Cream.....pnwc

      Sani serve is also a good make, taylor -obviously excellent, be cautious as some people list milk shake machines as ice cream units. Things to look at are, the auger in the freezer tube, ease of cleaning, and spare parts availability. Sani serve uses a multi vee belt and is fairly easy to work on. Some bigger units use air cooling and some use water, be careful to read the plate, also some use 110v, 220 and some 3 phase, be aware of really cheap deals , read the plate it should be on the back side of the machine. Some use box systems for the mix and some just have a hopper on top of the freezer tube.
      I have a Sweden machine (obsolete) its a brute it makes fantastic icecream though, make 3 gallons in 20 minutes.

        I can't imagine that it will be high volume, but I would like to be able to do Coc. and Van. and later on put in a dipping station and blend our own "higher end" flavors. I am leaning to a counter machine. Also I see lots of used machines what do you look for if you go that route?

            lol, i entertained the idea of doing milkshakes with 40 different flavors.....
            example would be..... cherry cheesecake milkshake would have real cherries and a slice of cheesecake mixed into it....
             
            that was................ until i priced a taylor twin tube milkshake machine.... 13grand !!!!..... i changed directions, lol

                          Not sure how it's handled in WV, but I know in NC if you get a soft-serve machine in addition to normal Health Department inspections, you have to be inspected by the Department of Agriculture and Manufacturing.  Because you are now producing ice cream or something along those lines.

                              I can speak from years of experience.
                              Over the last 40 years I have used Sweden
                              Taylor, 2 Stoelting, Coldelite and my current machine Electro-Freeze. I wore out all machines before the EF. I wish I had a Electro-Freeze from the beginning. It is a workhorse!! Recovery time is great. My machine is used, easily 85%+ for milkshakes and malts. We were voted BEST shakes by readers of the local newspaper 4 years in a row before they decided to discontinue the poll. Yeah it cost 13 grand 10 years ago. Worth every penny. Why? Because it is 10 YEARS OLD! Does that sound crazy? Maybe. But remember I wore out all previous machines!! None has lasted more than 5 years. I truly hope to get many more years outta this machine. DQ has used these machines for many years. In fact, you couldn't buy an Electro-Freeze for a long time as they were made ONLY for DQ all that time.
                              BTW my machine is a stand up unit with vanilla/chocolate/twist.
                              You couldn't pay me enough to give it up. Sorry but all previous machine I have owned were just junk compared to my Electro-Freeze.  OK, so flame me. I just speak from experience.
