Some questions from a newb.

I just wanted to say Hi y'all! I have been lurking here for quite some time and I just wanted to introduce myself and get some help from some of these wonderful people here. I am curious if anyone has ever placed a flat griddle (like a lodge cast iron single burner one) directly on a burner on their hot dog cart. I just want to use it to grill some onions. I also wanted to know if anyone ever kept or cooked onions in their pans (steam/boil pans)??? Thanks everyone in advance!

Be sure to check with your local health department for all rules and guidelines they may have for holding grilled onions. Some years ago there was a major outbreak of deadly botulism at a mall restaurant here due to grilled onions being held at an improper temperature. The resulting lawsuits bankrupted the restaurant and its owner.

Thank you very much for taking the time to respond to my post. I kinda thought I would have gotten a little more than one though....

Considering how cheap onions are (where), thin slicing them and grilling almost to order is the way to go. I think 6star pretty well covered the hold deal. Treat the cooked item like any other item on your steam table and make sure the temps are to specs. Only thing with organics, is they'll melt (break down) at these temps in the long run to the point people will walk away.

Hi, I usta use sacrificial onions all day long just to attract customers, If someone wanted onions, I'd cook them special order on demand.CBB

I just want to use it to grill some onions. Using a griddle on top of a burner will trap a lot of heat under the griddle over a large area. I do it on my commercial gas stove, but there are no combustible components or wiring near the burners. I would contact the cart manufacturer and ask their advice. You may be ok, but I don't know what the construction of your cart is like.
