This is fascinating to me. I went to law school in Tennessee, and ate at many "meat 'n' threes," but I never encountered green beans cooked WITH potatoes. First time I had them was several years ago at Mrs. White's Golden Rule Cafe in Phoenix. What part of the South features this dish? And am I correct that the green beans and potatoes are served on top of rice? Isn't that a little heavy on the starch? Just asking . . . no offense intended or meant.

I grew up eating Green Beans and Ham....always had potatoes...never with rice though.....looks good!

Greenbeans Ham and potatoes all cooked together in a big pot is a common meal here in Pa Dutch Country.

A big pot of greenbeans ham and potatoes has been a summer staple my whole life in Ohio and Indiana. Never had it with rice though. You have to make enough for more than one day as it gets better over time.

Rumaki, Green Beans, Ham and either New or Red Potatoes have been a staple in the East, Midwest & South forever. I've never seen it served with rice though. That is a little Starch overkill, no pun intended!

Foodbme: Thanks for the information. I guess I've lived a deprived life! I grew up in Indianapolis, went to college in Chicago and law school in Nashville, worked for a law firm in upstate New York and in Washington, DC, taught in Boston for a semester, and now live in Minneapolis. And I travel a lot on business. I've had slow-cooked southern- and midwestern-style green beans (with ham and a ham bone) many times. My mother, from central Illinois, always made them that way. I've had them at many Roadfood-type places (Sylvan Park, Hollyhock Hill, Beaumont Inn, just to name three). But in those cases, the potatoes came separately, typically mashed. Certainly I've eaten my share of boiled new potatoes, and I love 'em. But until Mrs. White's in Phoenix, I never had them cooked together. Live and learn!

Green beans over rice makes sense when you think about it - Louisiana is a big rice producer - very filling, and could feed a large family inexpensively, I've also seen smothered cabbage served over rice as well.

Add some butter to the rice and sprinkle a little Tony Chachere's all over the beans & rice and it's eaten' High on the Hog!

Foodbme - sounds great to me - but you have to be careful with Tony's as it is very salty. I make my own version of salt-free Creole seasoning and keep it in a jar with a tight lid, in the refrigerator.

Over in Alabama the good folks of Etowah county put out the best kettle of green beans I ever ate: http://www.scrumptiousche...ans-with-Tons-of-Bacon To sum up: Ratio is key. 3 pounds of beans needs 3 pounds of bacon and 3 pounds of potatoes. If you can get your hands on Kenebec potatoes you're ahead of the game.

Don't know that I've ever seen green beans & potatoes as a dish in any restaurants or meat 'n threes, but I've seen it many times at homes and pot luck events. I love the stuff, and JB's pics are super. Who the heck needs a food stylist here?
