This is my favorite recipe and it makes a great loaf of garlic bread. 1/2 cup unsalted butter, room temperature 1 Tablespoon good olive oil 1/2 cup grated pecorino Romano cheese 1/4 cup finely chopped fresh Italian parsley (flat leaves) 4 garlic cloves, minced Mix all ingredients. Cut loaf of Italian bread lenghwise nearly all the way through and spread mixture ove both cut sides. Wrap in foil and heat for 15 minutes. Remove the foil; open bread and put under heated broiler until just a little lightly browned (Watch carefully)

I like to take a stick of butter, melt, and slice 3-4 cloves of garlic into the butter, then just let it sit over a low, low heat for 30 minutes. Take out the garlic, and spoon the flavored butter over the bread (got to have crusty Italian bread). Add mozz cheese (not fresh mozz, too juicy), fold together, wrap in foil, and bake in 350 oven for 20-30 minutes.
