Spinach and eggs...Italian style !

Here's a sandwich I grew up with...is healthier than many..and delicious.
My grandmother fried up some fresh spinach in olive oil and a little garlic and salt...and then added scrambled eggs to the skillet. Perhaps add a little Romano or Parm. cheese...mix well..and put on a hunk of crispy Italian bread or crispy hard roll!
It is a great meatless meal too....Italian pizza and some sub shops in the North East make it. Highly recommended

    Thanks Lee! No one I know of sells them here in Texas soooo, it's on my new things to cook list.

    Anyone have more Italian sandwich ideas?

    Pepper and egg was more common where I grew up. Well-fried (not crunchy) peppers in a lot of olive oil and a little garlic. Scrambled eggs on top of that.

    I just now figured out why already scrambled eggs were added. It's because if you add raw eggs to a bunch of vegetables in the skillet they don't scramble up all curdy and nice. More like tiny little gritty bits.

    Yeah, pepper & egg or peas & egg. Same thing as the first recipe, choose your own green vegetable. Very good!

    True..true...My Sicilian Grandmother made eggs and anything. I guess it stretched a meal into something during the depression eggs and any vegetable,especially potatoes,peppers(or both) peas,the above thread's spinach, asparagas,even left over meatballs!

    My Italian Nona made eggs with potatoes or with zucchini and onions. Both delicious.

    Use the same ingredients spinach, chard or peppers saute in Olive Oil, scrambl eggs then take a fresh loaf of Italian bread and take out some of the middle, stuff the eggs and peppers into loaf, cut in half and enjoy. You may want a little parm cheese on it also.

    A cold, sliced zucchini egg bake on crusty Italian bread was a mainstay in our house....fry up the smaller zucchini, sliced into coins, in olive oil....drain, spread out in a baking pan.....add beaten eggs to cover (with salt and pepper to taste) and bake in a moderate oven until the eggs are set. Let cool a bit before you slice and make sandwiches.

    I also remember my Sicilian Grandma scrambled up some left over meatballs with eggs...Strange..and the color(made with the sauce and all) turned me off, but my dad sure loved it on a good Italian roll. My dad also loved scrambled eggs with asparagas mixed in.

    No, but an Italian co-worker turned me on to asparagus sauteed in olive oil with eggs added after the veggies were lightly browned on Italian bread. I've been eating it that way ever since. I'm sure the spinach is just as good and I will try it.

    I've been eating them since I was little, but you reminded me of it. On a nice Sciortino's bakery roll, they are devine.
