Spoon Bread

I was feeling a bit poorly this moring when I had coffee with Mamaw Smith at 5:00AM. I read the morning paper and returned next door where I slept a few more hours. I had to take her to the MD for an issue and on the way back, she wanted to make spoon bread for me. Of course I did not refuse. A little while later, she was knocking at my door with a hot platter of spoon bread.

For those of you who do not know what spoon bread is, Mamaw takes corn meal and puts it in a double boiler and basically cooks it. She then adds shortening, eggs and a little seasoning and then fries it.

Very good with a little libation.

She also sent over a few potatoes and onions. Very good.

    Do you eat the spoon bread plain or with any accompaniment?

    I've never had it, but it sure looks comfortin'. Does Mamaw's look like this one? pb

    Sundancer, I sure wish my mother would knock on my door with warm spoon bread in hand! I love spoon bread, and let me say that you are a very lucky man to have someone make it fresh for you. Chris

    Mamaw Smith's looks very much like that except it is much flatter and in a pan.
