Re:Sport Peppers - What are they?
There is no such thing as a specific pepper called a sport pepper. A sport pepper is basically any young, small (1 inch to 1 1/2 inch, light green flesh pepper that is medium in heat. It is only a sport pepper after it's been put in a vinegar or salt and vinegar brine. Capsicum annum varieties are common as sport peppers and grown a lot in the south. Here in California, our palates are spicier so we use casabellas on the side, not on our food. Young pepperchinis are big on the east coast. Serrano's are to dark and hot to use as a sport pepper.
