Starting a small business (tryiing) Wed, 10/17/07 8:39 AM (permalink)
Appreciate ANY input, I've tried to start a business for about 6 months now
-----------
I'm almost at my wits & bank acct end.
I just wanted to sell breakfasts, coffee/donuts, to people on their way to work.
I bought a small, used concession trailer.
I started fixing it up (new paint, plastic coat, tiled floor, hand washing sink/water heater, fans 2 refrigerators, trash can)
I've got over $4,000.00 invested, (not to mention labor)
Maybe I was over zealous / stupid or...
I'm ready to start, (I think)
but haven't started any business yet. (haven't been able to yet)
I even registered a fictitious name (Koffee & Kwik), passed a state test as a food safety manager, bought equipment & some supplies etc. made some signs.
I was told by the Dept of Agriculture (Food safety) http://www.doacs.state.fl.us/fs/ that I needed a commissary, any restaurant, or someplace that has a triple sink, to wash, rinse, and sanitize my coffee urns; everything else will be prepackaged. Heres the guide to Mobile food.
http://www.doacs.state.fl.us/fs/mobile_guide.pdfÂ
Can you direct me to, or forward this email to someone
with some expertise in this area? knows the laws I need to know?
-----------
If you own a restaurant or just a kitchen with a triple sink
that I can use/rent for 15/20 minutes a day. (I'll pay everyday)

I have a small concession trailer that needs a commissary (per se)
It needs a place for 15 to 20 minutes a day to wash, rinse, sanitize 1 to 3 coffee urns.
Buying of the soap and sanitizer will be totally my responsibility.
No expense to you EVER
I might also need to buy some supplies from you.
Want to be in the Holiday / Tarpon area (kinda close to us 19)

I have followed similar threads before.

Unless I am wrong, your best bet is to recruit an Elks, Eagles, church, or some other place that could use the few extra bucks.

    I'll be following your plight.

Why can't you set up a triple sink at your house or something?

The health department would want to put you in jail. LMAO That's why.

Are there any other vendors in your area? If there is, maybe you could ask them who they use for a commissary. Most commissarys will charge a fee to sign the health departments forms. You might try a google search in your area, "commercial kitchens or commercial commissarys" or something like that. You may also try installing a triple sink in your trailer. But chances of having the room needed for sinks big enough for a coffee urn may be difficult. There will also be water heater issues etc...Good luck. This is a fairly common and defenitly not insurmountable problem.

I don't know Dr.,here in New Hampshire it IS possible to set up a home kitchen as a commisary. It does require a triple sink and a few other items as well as an inspection of your kitchen by the state. But basically,a clean kitchen,3-bay sink, and a couple of thermometers in your cooling units and it can work...

IMO, once you get this triple sink situation settled, you've got to turn your attention totally to cash flow. Your every activity should be to produce cash flow. No more painting, tiled floors or whatever unless these directly bring a surplus of cash to you, until your cash situation stabilizes.

            Best of luck!

Get your donut route set up now, deliver to offices, for meetings etc. you can do that now for cash flow. Think some stuffed croissants also.
