I went to the Texas State Fair this year, so I have opinions about the fried food possibilities there.
I first had a Spicy Fried Beef Pie with Cheese. This was really very tasty; I'd have that again.
A non-fried food that I didn't try was Pig Candy, sausages with a sweet glaze.
I tried the Sweet Jalapeño Corn Dog Shrimp. The batter and glaze worked well together--it was a sweet cornbread (like that served by Boston Market) with a spicy apricot glaze. But the shrimp were very overcooked and very tough. I'd think twice before getting that again.
I then tried the Country-Fried Pork Chips. The breading was pretty nice, with a strong peppery flavor. But the meat was very tough and stringy. I'd think twice before having those again.
The Fried Boudain Balls (Boudain is apparently much like dirty rice) were
delicious. One of my favorite foods from the fair.
The Fried Peaches and Cream were probably the winner on taste of everything I tried. They were delicious, in a crunchy streusel-like batter. And they were served with the most attention to plating of anything I tried:
Last, I had the Deep-Fried Pecan Pie. It was something of a disappointment--it mostly tasted of crust, without much of the hot gooey pecan pie filling I had hoped for:
The Texas State Fair does seem to be a mecca for people with a deep fryer and the sort of mad genius more traditionally devoted to training a legion of hyperintelligent voles to conquer Sheboygan. Among the other options I didn't try:
Deep-fried butter
Deep-fried latte
Deep-fried ribs
Deep-fried s'mores
