Steak on stovetop to oven-the result Sun, 02/15/09 9:58 PM (permalink)
Thanks to everyone for your Ideas.
I took a suggestion from everybody's recipe and mixed them together.

Salt & Pepper on both sides.
Veg. oil in cast iron pan-heat till smoking
Heat oven to 500 degrees
Started medium rare steak 2 minutes each side on stove, put in oven 5 minutes
Take out & let rest
Started rare steak 1 minute each side on stove, put in oven 3 minutes

Both came out very good.
In actuality the steaks were only 3/4" thick.

that beef looks great!  I like my baked potatoes without foil (makes the skin too soggy for me), I add a little oil and salt to draw out the sweetness and crisp the skin...usually 400 for an hour

You are right on the spud.  I'll enjoy a baked potato any way I get it in a restaurant, but there is something special when that crispy crust is done just right.

You didn't flip them while in oven it appears.  I do that.

I did the potatos in the microwave & wrapped them in foil to keep them warm.

I just showed a picture of the trimmings to Redford and Lucy!  They went crazy!

If I had your $, I'd pay $9.89 a pound!  JohnA and I have to bide our time and wait for Publix sales..That's what the poor people do...
