Steaks or Roast?

I was fortunate enough to purchase an Angus Choice Whole Filet from Sam's club for under $8 a lb today. I'm wondering from all you learned folks out there....do I leave it whole and roast, or do I cut into filet's. I know that I have to trim off the sinew regardless....but am uncertain which way to go....planning on making a nice dinner for hubby, and another couple along with their kids...and we can do it either way.. Your thoughts as always are most appreciated.

Did you get a PISMO(already trimmed)? If not, 1st remove the chain then all fat and silver skin. How many people for your dinner? You might consider removing the head(also knowns as a butt tender) and use that as a roast. On a large fillet, it should weigh about 2 1/2lbs. If you slow cook it to MR or less, there should be almost no shrinkage. If you wanted to strech it a bit, you might consider doing a wellington. All you need is puff pasted from the grocer, about 4-6 THIN slice of procuitto and a mushroom duxelle. That will add enough bulk to it to add another serving. britt.

If I do decide to use a grill, it will be for steaks...it's only about 25 degrees outside....I'm thinking of low roasting it in the oven and making a port wine reduction for a sauce...combo port wine and red wine...serving petite peas and mushrooms...along with baked potato and baked yams...and I have jumbo shrimp to saute with garlic on the side.. dessert will be chocolate fondue...dipping pineapple, strawberries and madelines

Trim the end pieces, as they will be cooked well done. They will be great for another meal. I suggest roasting it after that. It will cook uniformly. It is easy to slice just as much as you want. No waste The problem that can occur with steaks is that they can contract and take longer to cook than you realize. However, you could sear the steaks and finish them in an oven too. Your choice. mark
