 Super Bowl Food Bets

As is customary, the Mayors of the 2 cities competing in the Super Bowl usually make a bet of some sort on the game.
This year, the mayors are betting food.
The Seattle mayor is betting Salmon & Dungeness Crab, which is understandable.
The Denver mayor is betting Green Chile??????????
Pardon my ignorance but I don't get it??
I didn't realize that Denver was famous for Green Chile!
Am I missing something here??
I would have guessed Steaks or Bison Meat or Craft Beers
Can someone please explain the Denver connection to Green Chile other than it's close to NM?

      That's true! You're right! Mountain Oysters would be a better representation for Denver than Green Chile's!
      Incidentally, Prairie Oysters are much smaller than Mountain Oysters since they're harvested from Prairie Dogs indigenous to the plains East of Colorado!
      Denver 24, Seattle 21 in Overtime!

        I'd think prarie oysters would work for the game. Sounds like they're snack size!
