Sweet Potato Fries

I'm going to give them a trial run here. What do you really like on yours? Any additional suggestions?

    I prefer mine with that magic salt and pepper mixture that only restaurants seem to have. I don't dip mine in anything, but I have friends who like theirs with honey mustard.

    a touch of lemon seems to help..either lemon juice or lemon-pepper.  While I like my potatoes with skins, SP seem better without...and cook in much less time

    Ohhh ... "Sweet potato fries" ....
    I always hear people (generally women) gush when they see them on the menu.
    I never hear "Wow these are great" ... once they come to the table.
    The closest to remarkable I've ever had were frozen skinny (accidentally overcooked) with a little crunch and a little creamy inside.  C+ at best.
    Mostly they just come out like mushy pumpkin fried thingys.

    I've ordered sweet potato fries at high end burger joints (Umami) and a couple chains that sell them.
     
    They're all the same and wheregreggeats described them perfectly...  mushy pumpkin fried thingys.
     
    I dip them in whatever comes in the little containers.  Sweeter than Ranch but definitely not honey mustard.  Don't know what it was but I'm a dipper.

    I like em crisp, but I can't seem to get em crisp when cooking at home.    I think secret is thin cuts cooked in very hot oil.   The result is crisp outside and tender middles.   ... Of course these do not hold well and needs to be served immediately and fresh out of the frier.

    You could do them as chips (if you decide to do them all).

    A chip will stay crisper for longer...but fans of sweet potatoes usually just want a standard sweet potato a holiday'd-up version... or some pie. The inside of the SP fries are cross between pumpkin & banana in texture.

    I have had many places that serve a crisp sweet potato fry. One local place even has sweet potato tater tots! Nice and crisp!

    I like them with just salt & pepper but I really do prefer a baked sweet potato. On baked I use butter and salt & pepper.

    I hear that Popeye won't eat them because he would consider it to be cannibalism (OK, 10 points to the first person to actually get that!).

    The only time I;ve ever enjoyed sweet potato fries was at the Ohio State Fair, about 15 or so years ago. I'd had them before, and I've had them since. None ever measured up to the ones at the fair. They came in a paper cone and had a little salt and pepper on them. They were wonderful.
